Diyetisyenlerin fonksiyonel besinlere yönelik farkındalıkları, bilgi düzeyleri, tüketim ve öneri sıklıklarının değerlendirilmesi
Özet
Fonksiyonel besinler hakkında çok fazla farklı tanım yapılmış olsa da bu besinler
hakkındaki genel görüş; geleneksel besinlere benzeyen, normal bir diyetin parçası olarak
tüketilen, besleyicilik işlevinin ötesinde, sağlığı geliştirici veya hastalık risklerini önleme
gibi fizyolojik faydaları olduğu düşünülen besinler olarak özetlenebilir. Çalışma
diyetisyenlerin fonksiyonel besinlere yönelik farkındalıkları, bilgi düzeyleri, tüketim ve
öneri sıklıklarının değerlendirilmesi amacıyla planlanmıştır. Çalışma, Türkiye’deki
Beslenme ve Diyetetik bölümlerinden mezun olup çalışma için gönüllü olmayı kabul eden
diyetisyenler üzerinde, Aralık 2019-Mayıs 2021 tarihleri arasında planlanıp yapılmıştır.
Araştırmaya dahil edilen diyetisyenlerin sosyodemografik özellikleri, genel özellikleri,
fonksiyonel besinlere yönelik bilgi düzeyleri, tüketim ve önerim sıklıklarının
belirlenebilmesi için çoktan seçmeli ve açık uçlu soruların bulunduğu 21 soruluk bir anket
formu uygulanmıştır Bireylere, demografik ve kişisel özellikleri, fonksiyonel besinlere
yönelik farkındalıkları, tüketim ve önerme durumlarına ilişkin bilgileri saptamak amacıyla
yüzyüze görüşerek veya e-mail yoluyla anket formu uygulanmıştır. Anket formu,
araştırmacı tarafından çalışmaya katılan diyetisyenlerle yüzyüze veya e-posta üzerinden
görüşme tekniği kullanılarak elde edilmiştir. Anket formunun birinci, ikinci ve üçüncü
bölümünde katılımcıların genel bilgileri, sosyo-demografik özellikleri, sağlık durumları
pazarda var olan fonksiyonel besinlere dair farkındalıkları - kullanım alışkanlıklarının
belirlenmesi amacı ile listelenen fonksiyonel besin çeşitlerinden oluşan besin-ürün listesi
verilmiş ve bu besin ve ürünlere yönelik farkındalıkları, bilgi düzeyleri, kullanım sıklıkları,
hastalara önerme durumları, fonksiyonel besinleri kullanma ve hastalara önerme nedenleri
ile ilgili genel bilgilerine yönelik sorular bulunmaktadır. Anket formunun son kısmında ise
katılımcıların fonksiyonel besinlere olan tutumları ve bakış açılarını incelemek amacıyla
Tüketicilerin Fonksiyonel Gıdalara Yönelik Tutum Ölçeği kullanılmıştır. Bu çalışmaya yaş
ortalamaları 25.8±3.86 yıl olan, %93.6’sı kadın olmak üzere toplam 281 diyetisyen
katılmıştır. Çalışmaya katılan diyetisyenlerin %96.8’i fonksiyonel besin terimini daha önce duyduğunu, %42.0’ı fonksiyonel besinlerin ilaçlarla etkileşime geçmesiyle ilgili endişe
sahibi olduğunu, %90.8’i fonksiyonel besin ile takviye edici besin teriminin aynı
olmadığını düşünmektedir. Lisans mezunu diyetisyenlerin %96.3’ü fonksiyonel besini
daha önce duymuş iken, %1.1’i duymadığını, %2.6’sı emin olmadığını belirtmiştir. Yüksek
lisans mezunu diyetisyenlerin %97.6’sı fonksiyonel besini daha önce duymuş iken, %2.4’ü
emin olmadığını belirtmiştir. Doktora mezunu diyetisyenlerin %100’ü fonksiyonel besini
daha önce duyduğunu belirtmiştir. Bireylerin kendi sağlığı üzerinde ne kadar kontrol sahibi
olduğunu düşünme oranına göre Fonksiyonel Gıdalara Yönelik Tutum Ölçeğinde yer alan
fayda, sağlık riski, kişisel beklenti ve nitelikli bilgi ihtiyacı alt boyutunun aldıkları puanlar
arasında istatistiksel olarak anlamlı bir fark olduğu belirlenmiştir (p<0.05). Bu çalışma
sonucunda fonksiyonel besinlerin diyetisyenler tarafından bilindiği, hem tüketilip hem
önerildiği aynı zamanda hastalara öneride bulunurken ve ilaçlarla etkileşimi konusunda
daha temkinli, bilinçli yaklaştığı görülmektedir.
Although there are many different definitions regarding functional foods, the general
view regarding these foods can be summarized as foods that are similar to traditional foods
that are consumed as part of a normal diet and thought to have physiological benefits beyond
their normal functions such as promoting health and mitigating disease risks. The study was
planned to evaluate dietitians' awareness of functional foods and their level of knowledge,
their frequency of recommendation for consumption regarding these foods. The study was
planned and conducted between December 2019 and May 2021 on dietitians who graduated
from Nutrition and Dietetics departments in Turkey and volunteered to participate in the
study. In order to determine the sociodemographic characteristics, general characteristics,
knowledge levels, consumption and recommendation frequencies of the dietitians included
in the study, a 21 question questionnaire with multiple-choice and open-ended questions was
applied. The questionnaire form was applied to the individuals via face-to-face interviews
or through e-mails to determine their demographic and personal characteristics, awareness
of functional foods, and consumption and recommendation status regarding these foods. The
questionnaire form was administered by the researcher via the face-to-face or e-mail
interview technique, performed with the dietitians participating in the study. In the first,
second and third sections of the questionnaire, the food-product list consisting of the
functional foods was provided to determine the general information, socio-demographic
characteristics, the health status of the participants, their awareness of the functional foods
available in the market and their usage habits regarding these foods. Additionally, in these
sections, there are questions about the dietitians' awareness of these foods and products, their
level of knowledge, their frequency of use, their recommendation to patients, their general
knowledge of using functional foods and the reasons for recommending them to patients. In
the final section of the questionnaire, the Consumer Attitudes Towards Functional Foods
Scale was used to examine the attitudes and perspectives of the participants towards
functional foods. A total of 281 dietitians, 93.6% of whom were female, with a mean age of
25.8±3.86 years, participated in this study. Of the dietitians participating in the study, 96,8% stated that they had heard the term functional food before, 42.0% stated that they were
concerned about the interaction between functional foods and drugs, and 90,8% believed
that the term functional food and nutritional supplement were not the same. While 96.3% of
the dietitians with undergraduate degrees stated that they had heard of functional foods
before, 1.1% stated that they had not, and 2,6% stated that they were not sure. While 97.6%
of the dietitians with postgraduate degrees stated that they had heard of functional foods
before, 2.4% stated that they were not sure. 100% of dietitians with doctorate degrees stated
that they had heard of functional foods before. It was determined that there was a statistically
significant difference between the scores of benefit, health risk, personal expectation and
need for qualified information sub-dimensions in the Attitudes towards Functional Foods
Scale according to the rate of individuals thinking about how much control they had over
their own health (p<0.05). As a result of this study, it was determined that functional foods
were known by dietitians, that they were both consumed and recommended by dietitians,
and that dietitians approached this issue with care and awareness in the context of
interactions with drugs while making recommendations regarding such foods.
